Ingredients | Turkey Pot Pie Recipes1 (15 ounce) package pastry for a 10-inch double crust pie2 teaspoons canola oil1 small onion, minced2 carrots, diced1 stalk celery, finely chopped2 tablespoons dried parsley1 teaspoon dried oreganosalt and ground black pepper to taste1 tablespoon butter2 cups low-sodium chicken broth1 cup peeled and cubed sweet potato1 cup frozen green peas1 tablespoon butter2 cups cubed cooked turkey3 tablespoons all-purpose flour⅔ cup milk1 stalk celery, finely choppedDirectionsPreheat oven to 425 degrees F (220 degrees C). Press pie crust pastry into the bottom of a 10-inch pie dish; reserve top crust.Heat canola oil in a large skillet over medium heat; cook and stir onion, carrots, celery, parsley, oregano, salt, and black pepper until vegetables are slightly tender, about 5 minutes.
