Ingredients | Leftover Turkey Soup Recipes Without Carcass1 meaty turkey carcass, cut into pieces7 cups water1 tablespoon reduced-sodium chicken bouillon granules1 bay leaf2 cups shredded cabbage1 (15 ounce) can great Northern beans, rinsed and drained1 (15 ounce) can garbanzo beans, drained1 (14.5 ounce) can stewed tomatoes1 large onion, chopped¼ cup chopped fresh parsley1 clove garlic, minced1 teaspoon dried basil, crushed⅛ teaspoon ground black pepperDirectionsCombine turkey carcass pieces, water, bouillon, and bay leaf in a large Dutch oven. Bring to a boil. Reduce heat and simmer, covered, for 1 hour.Remove turkey carcass pieces, reserving broth. Remove meat once cool and discard bones.Strain broth; return broth and turkey to the Dutch oven. Add cabbage, great Northern beans, garbanzo beans, tomatoes, onion, parsley, garlic, basil, and pepper. Bring to a boil.
